J2 Steakhouse: Elevated Texas Fare

J2 Steakhouse: Elevated Texas Fare

by Steve Gamel

Those who have lived in or around Lewisville long enough will remember the old Lewisville Feed Mill, which was built in 1886. Over time, it became the centerpiece of a city known for having its fair share of rich history and reinvention. You may have noticed that the doors to the building were reopened, and that the space has been converted into a new restaurant. But if you think the historical significance of the mill has been lost forever, think again. It is reborn with J2 Steakhouse.

J2 Steakhouse opened in May, and is a sight to see from both a culinary standpoint and its unique and inviting atmosphere. A lot went into honoring, restoring, and openly celebrating the lore and landscape of the building. From the original mills and long-leaf pine rafters to a staff that strives to live and breathe an unobtrusive sense of hospitality and service, these distinctive features simply can’t be found anywhere else.

“It’s worth the drive, whether you live down the street or anywhere else in Denton County,” said Owner Jim Murray, who added that it’s been both a challenge and an honor to redevelop the feed mill. “This isn’t your typical restaurant.”

Tying everything together is Executive Chef, Johnathon Pauley, Sous Chef Clint Davis, and the rest of the amazing staff. Chef Pauley has more than a decade of experience and brings a straightforward approach to cooking and an affinity for the seasonal, market-sourced ingredients that are the hallmark of J2 Steakhouse’s unique elevated Texas-inspired cuisine. Everything at J2 is made from scratch, right down to the ketchup, breads,
and ice cream.

Chef Pauley’s passion shows in his dishes, whether it be the Prime Angus Filet, Prime Akaushi Rib Eye, Seared Scallops, Seared Halibut, or his signature Popcorn Ice Cream and Red Beet Creme Brulee. The menu changes weekly, and he’s continuously finding fresh ingredients to satisfy any palate. To complement the food, J2 Steakhouse also has a wide selection of cocktails, wine, and beer.

Whether you’re a small family looking for a quiet night out, or you need a restaurant with great food and an engaging atmosphere that can take care of a large party, look no further than J2 Steakhouse. It’s the perfect fusion of elevated Texas cuisine and local history.

“[Chef Pauley] only goes with the best ingredients he can get,” Murray said. “He’s doing things that are pretty unique, and the best part is we had an incredible staff from the get-go. His sous chef and many of his cooks followed him here. Come see Chef Pauley. This is his show, and we’re excited he’s leading our team.”
